Dr. Encarna is an Agricultural Engineer and a Professor of Engineer in the area of Food Technology at the Polytechnic University of Cartagena, Spain. (UPCT) She is also a Director of the UPCT-Marnys Business Chair, Head of the Food Quality and Health Unit of the Institute of Plant Biotechnology of the UPCT and a member of the Post-harvesting and Refrigeration Group. She is a specialist in post-harvest technology, fresh processed products and the implementation of emerging technologies for the maintenance of bioactive compounds, control and regulation of the general horticultural metabolism, with impact on quality. In addition Dr. Encarna is very involved in the search for new uses for agri-food bio-waste, particularly in an overpopulated world where a third of all food produced for human consumption is thrown away every year. This concept of circular economy has her to found the technology-based company (EBT), BIODIVERSO (www.biodiversocosmetic.com), whose objective is the development of natural cosmetics from fruits, vegetables and their by-products, enriching and nourishing the skin with bioactive compounds present in these products..
